Cyprus Recipe - Scaloppini Etna


This recipe is featured in Varoshiotis website, the real gastronomic delight can be sampled at their restaurant in Larnaca itself.

Ingredients for 4 portions:


* 1200 gram pork fillets cut in cubes
* Vegetable oil for frying
* 300 gram sliced mushrooms
* ½ litre fresh cream
* 1 small coffee cup of Commandaria liquor
* 1 small coffee cup white wine
* Finely chopped parsley
* 1 medium onion finely chopped
* 400 gram vegetables to your liking
* 400 gram mash potatoes
* Salt & pepper


Method:

* Heat the oil in a pan and sauté the fillets until slightly browned.
* Remove extra oil.
* Add the onions & mushrooms and once sautéed slightly add the Commandaria liquor and wine.
* Once the juices evaporate, add the fresh cream.
* Cook on a low gas until sauce combines, garnish with parsley and serve with mash potatoes.

Accompany with vegetables that please you.

Cyprus Recipe - Penne di Roma


Penne di Roma - a dish served at Varoshiotis Restaurant, Larnaca, Cyprus

Ingrediants

* 600 grams cooked penne pasta
* 50 grams olive oil
* 400 grams of beef fillet pieces
* 100 grams of white wine
* 200 grams fresh cream
* 200 grams sliced mushrooms
* Parmesan cheese
* Salt & pepper

Method:

* Heat olive oil in pan and sauté the meat
* Add the mushrooms and then the wine
* Once the sauce has combined, add the fresh cream, lower the gas and leave the sauce to thicken.
* Then add the hot pasta, add salt & pepper to fix taste your liking.

Cyprus Recipes - Tourva


This tasty recipe for Tourva or moist coconut cake, is sure to be a sweet fixing hit, where ever you are.

1/4 lb sweet butter
2 tablespoons shortening
1 cup sugar
6 eggs separated

1 1/2 cups plain flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
6 to 8 ounces of coconut

Cream butter and shortening with the sugar. Add egg yolks and beat well. Add sifted dry ingredients alternately with milk. Add coconut and vanilla. Beat egg whites until stiff and fold into mixture. Pour into 9 inch by 13 inch buttered baking pan and bake at 350 degrees for about 40 minutes. When done cut in pieces and pour hot syrup over warm cake.

For the syrup:
3 cups sugar
4 and a half cups water some lemon juice

Bring ingredients to boil and simmer for 15 minutes. Add lemon when it starts to boil.

Cyprus Recipe - Afelia


A fantastic combination of pork in light spices and red wine, served with rice or a salad of mixed leaves and warm bread. It is a very simple Cypriot recipe that is easy to make as it is slowly casseroled in one pot. Well worth it! The meat can be prepared the day before and left overnight.

1kg pork neck
2 tsp salt
1 tsp cinnamon powder
1-2 tbsp ground coriander
200ml red wine
6 tbsp olive oil
A pinch of pepper

1. Cut the meat into small pieces.
2. Place the oil in a pan and fry the meat on a low heat.
3. When the meat is brown, add the wine, a little at a time, and cover the pan. The steam will help the meat to cook and remain tender.
4. Once the wine has evaporated, add the salt, pepper, cinnamon and coriander.
5. Cover and leave to cook on a low heat until tender. Serve with mashed or fried potato, rice and salad.

Cyprus Recipes - Kleftiko with potatoes



1kg lamb shoulder
1 tbsp olive oil
280 ml water
1 heaped tsp salt
3-4 bay leaves
1 tbsp lemon juice
1kg potatoes

1. Peel and wash the potatoes. Cut each into two or three pieces. Leave small ones whole.
2. Place them on the bottom of an earthenware or deep casserole dish.
3. Cut the meat into pieces and place it on top of the potatoes.
4. Pour the oil and water over the meat, and add the salt, lemon and bay leaves.
5. Cover with the lid and place in a hot oven.
6. Place in a moderate oven and leave to cook for two to three hours until the meat is very tender. Serve with red wine.
